ORVALLIS - Oregon State University will hold its first Acidified Foods School on Monday and Tuesday, July 26-27, in Wiegand Hall on the OSU campus.
Co-sponsored by the Food Processor's Institute, this event is designed to meet the FDA requirement for commercial processors of acidified foods. A significant increase in the number of Oregonians interested in processing acidified foods has prompted the creation of this school, according to Mark Daeschel, food scientist at OSU.
This is a modified version of the Better Process Control School and was recently approved by FDA-CFSAN. The regular Better Process Control School will continue to be offered each January to meet the needs of both low-acid and acidified food processors.
